Coat the ribs in Dijon mustard and dry rub.  Be sure to coat both sides.

Place ribs, meat side up, on the smoker. Plan to smoke for about three hours at 250* Fahrenheit.

5

Start spritzing 90 minutes into the smoke with apple cider vinegar. Then spritz every 20-30 minutes.

6

Wrap the meat in foil with butter and honey. Place back onto the smoker, meat side down, for two more hours.

7

Place the ribs back on the smoker, meat side up, and glaze with your barbecue sauce. Cook one more hour, uncovered.

8

Glaze one last time before serving, then slice between the bones and serve.
