Or maybe I’m wrong?
Maybe you woke up this morning and it finally dawned on your that today is the day, and you feel like being a little festive, and want to invite some friends over, but have zero ideas?
Or perhaps you just feel like having a few fun ideas for your next Taco Tuesday, or Wednesday, or any other day of the week…. because those are days I generally feel like eating tacos.
And these smoked chicken tacos are built for a party! Whether you are planning to have friends over to celebrate or cooking for a small family and just excited about the leftover potential of smoking a whole roaster chicken, this recipe for smoked shredded chicken tacos is completely flexible, delicious, and incredibly budget friendly. I wrote all about this recipe in my latest article for Wine4.Me.
What we’re doing here is smoking a whole chicken, shredding it, and building our tacos. With one 4-5 lb whole chicken, you can yield about 6 cups of shredded chicken. That’s a lot of tacos!
The recipe is complete with instructions on smoking that gorgeous chicken slowly in your smoker, and tacos filled with an avocado crema and a delicious fresh crunchy slaw.
