Rack of Pork


How to Make:

Score the fat side of the rack of pork with three X's. Remove silver skin from bone side (if there is one).

How to Make:

Coat the rack with olive oil on all sides and liberally apply the dry rub.

How to Make:

Grill the rack of pork on each side for 2-4 minutes. Move the rack to indirect heat and continue cooking for additional 25 minutes.

How to Make:

Flip and cook additional 30 – 45 minutes or until the internal temperature of the rack is  145* F. Remove the rack at that point and make the glaze.

How to Make:

Add the shallots to butter and sauté for 6 min. Add remaining ingredients and stir. Bring to a simmer, reduce heat and simmer for additional 15 min. Remove from heat.

How to Serve:

Slice the rack of pork along the bone and then pour half the glaze over the rack. The other half place into a gravy boat for serving at the table.
