Grilled Prime Rib
PERFECT FOR CHRISTMAS
Start by removing the butcher's ties from the roast. Trim away any silver skin fat.
Season the roast with salt, pepper, and herbs.
Grill the rib roast over indirect heat, targeting 375* Fahrenheit inside the cooker.
Cook until the internal temperature of the roast is 120*F. About 15 minutes per pound.
While grilling make the compound butter.
Remove the roast from the grill. Cover in aluminium foil and let rest for 30 minutes.
Remove ties, slice and serve.
