PERFECT FOR CHRISTMAS
Start by trimming the tenderloin into an even cylinder; removing any silver skin.
Season the roast with olive oil, salt, pepper, and herbs.
Smoke the tenderloin until the internal temp is 130*F
(About 45 minutes)
While smoking make the compound butter.
After smoking, crank the heat up and sear each side for about 4 minutes.
Remove the roast from the grill. Let rest for 10 minutes then slice and serve.
