- 1 large white onion, cut in half from the poles
- ¾ cup sour cream
- 4 ounces cream cheese, softened
- 2 tablespoons chopped chives
- 2 teaspoons freshly squeezed lemon juice
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon kosher salt
Prepare Smoker: Target 225 degrees Fahrenheit using fruit wood like apple or cherry for a sweeter flavor. For more smoke flavor, you can use oak or hickory.
Smoke Onion: Cut the onion in half from the poles (versus the orbital). Place the onion halves on the smoker for two hours and then remove. Let cool. You can do this the day before for easier prep.
Make Dip: Finely dice the onion. Combine all ingredients in a large bowl and then stir to combine. Season to taste with more salt. Serve with your favorite chips and veggies.
Ingredients: You can use a red onion, but it will have a more pungent onion flavor. It will still be sweet. For more umami or savory flavors, add your favorite dry rub.
Prepping Onion: Cutting at the poles (where the stalks sprouted from) versus the orbital allows the cells from the onion to stay more intact providing better texture to the onion as you eat it in the dip.
