750mLSauvignon Blanc wine(Equivalent to one standard bottle. We used a Federalist Sauvignon Blanc)
4ouncesgin
4ouncesSt. Germain Elderflower Liqueur(We recommend specifically using this for the flavor profile)
4ouncessimple syrup
3ounceslemon juice(Freshly squeezed)
8-10ouncesclub soda(Adjust as needed to get the proper texture)
Instructions
Make Simple Syrup: In a small saucepan, combine 1 cup of water with 1 cup of sugar. Bring to a low simmer for 20 minutes and let cool. Try to make this the day before so it can completely cool overnight in the refrigerator.
Combine: Add all ingredients into a large pitcher and stir to combine.
Pour the ingredients into the slushie machine and close the latch. Press the power button, then select the “SPIKED SLUSH” button, or whatever your manufacturer suggests for alcoholic slush drinks, to start the process. The machine will run and be set to the proper temperature.
Wait: Allow the slushy machine to run for 20 – 30 minutes, and the mixture will freeze and become a slushie.
Serve: Once it has reached the proper temperature, you can dispense the Slushie into your favorite glass and garnish with a lemon twist.
Notes
Important Note: For an alcohol slushie to get to the proper texture, the alcohol level needs to be less than 14% and the sugar level over 4%. The portions above bring the alcohol and sugar levels to the right balance to freeze. Troubleshooting: If the French 77 Slushie does not freeze, it means the alcohol level is too high or the sugar level is too low. Most often, it's the sugar level because you dilute the wine. Add simple syrup in one tablespoon increments until it does.Simple Syrup Substitute: We've tried substituting the combo of club soda and simple syrup with 10 oz of Tonic, and it works well. You still may need to adjust with some water if it doesn't slush properly. This will all depend on how much alcohol your batch contains. It's all about adjusting until you get to your desired texture
