Sausage Queso Chipotle Bean Dip Recipe

A jazzed up Queso Bean Dip featuring ground sausage, green chilies, smoky chipotle pinto beans, and real shredded cheese. Smoky Chipotle Bean and Sausage Queso dip is a fantastic dip for summer cookouts, tailgating, or even camping.

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 pound bulk Italian sausage
  • 2 tablespoons unsalted butter
  • 2 tablespoons flour (Can substitute with 1:1 Gluten Free Flour as well)
  • 1 cup whole milk
  • 2 tablespoons Dijon mustard
  • 1 cup sharp cheddar cheese
  • 2 15-ounce cans Serious Beans Sweet and Smoky Chipotle Pinto Beans
  • 1 4-ounce can green chilies

Instructions

  • Cook Sausage: In a cast iron pan (at least 10-12 inches) over medium heat add olive oil and sausage. Stir often, breaking up the sausage into small chunks until browned (about six to eight minutes).
  • Make Roux: Add butter and flour to the sausage and stir for one minute until the sausage is coated and it starts to bubble. Then add milk and Dijon mustard. Bring milk to a low simmer and stir until the milk thickens (about two additional minutes). The milk should coat a spoon and not just run off.
  • Finish Queso Dip: Add the remaining ingredients continue cooking over medium low heat until incorporated and cheese is melted.
  • Serve: Serve warm in the pan, or transfer to a slow cooker on low to serve. For garnish, add additional green chilies and chives.
