Easy and Classic Ceviche

This easy and classic ceviche is made with rockfish (or other white fish like tilapia or bass) and is perfect for a sweltering summer day when it's too darn hot to cook.

  • 1 lb fresh white ocean fish (rockfish, bass, tilapia, snapper, halibut), cut into 1/4 to 1/2 inch cubes
  • 6 limes, juiced
  • 1 orange, juiced (the combined juice from the orange and lime should equal 1 cup of liquid)
  • 1/3 cup tomatoes, diced (I like cherry tomatoes for this)
  • 1/2 cup red onion, thinly sliced
  • 1 tablespoon jalapeño, finely diced, seeds removed
  • 1/4 cup cilantro, chopped
  • 1 small avocado, diced into small chunks (about the same size chunks as the fish)
  • 1/4 teaspoon kosher salt


  • In a large glass bowl, combine all ingredients and stir together. Allow it to marinate 15-30 minutes. Season to taste with salt. Serve immediately. 


*Alternatively: You can cook the fish in the marinade until done. Then remove from marinade set aside. Then, when ready to serve, toss with all other ingredients and top with fresh squeezed lime juice.
