Light, bubbly, and ridiculously refreshing, this Cucumber Mint Spritz is truly what summer dreams are made of. This cucumber cocktail recipe is crisp, slightly sweet, and will make you feel like it’s a spa-day-meets-happy-hour in a glass.

Whether you’re lounging on the deck or hosting a backyard bash, this cocktail is the perfect way to cool down and class up any gathering. I like to make a batch of cucumber simple syrup in advance, then you have a batch in your fridge for whenever you want to make this refreshing cocktail. This is a fairly low alcohol cocktail, which is great for days at the pool or if hosting a party! Bonus, you can also make a non-alcoholic version that’s just as good! It also pairs well with our Cucumber Salad on a hot day.

So grab your favorite wine glass and let’s spritz it up!

Ingredients

This easy refreshing cocktail is made by combining 4 simple ingredients:

  • Cucumber Simple Syrup — The refreshing and cooling flavors of cucumber with a sweet touch, great for so many cocktails. Or explore our other simple syrups like our Rhubarb Simple Syrup and Blueberry Simple Syrup.
  • Fresh Lime Juice — Be sure it’s freshly squeezed. You can even use the peel as a garnish if you wish.
  • Sparkling Wine — Cava or Prosecco works great for this. If making this non-alcoholic substitute with club soda or your favorite sparkling water beverage.
  • Garnish — I love garnishing with fresh mint sprigs and cucumber slices.
  • Optional — If you want a stronger drink you can add 1 oz of vodka or gin.

How to Make a Cucumber Simple Syrup

The cucumber simple syrup contains three simple ingredients: water, sugar, and diced cucumber. Follow these steps.

  1. In a medium saucepan, combine the sugar and water and bring to a boil, then simmer until the sugar dissolves (about 1-2 minutes).
  2. Add the diced cucumber and continue simmering for 10 minutes until the cucumber is soft and tender.
  3. Remove from heat, cover, and let it steep for another 10 minutes to soak in all that cucumber-y goodness.
  4. Strain the syrup through a fine mesh strainer into a jar. Use a spoon or fork to press out every last drop of the cucumber for maximum flavor.
  5. Let it cool and store it in the fridge.

It’ll keep for 2–3 weeks (but honestly, you’ll use it up way before that).


How to Make a Cucumber Mint Spritz Cocktail

Once you have your cucumber simple syrup the rest is so easy!

Add a few cubes of ice to your favorite wine glass. Pour in some of that cucumber simple syrup, some fresh lime juice, then top with sparkling wine — don’t be shy, make it sparkle!

Give it a gentle stir and garnish with fresh mint and cucumber slices.

Want it boozier? Add an ounce of gin or vodka for a fun twist.


Non-Alcoholic Version

To make this drink non-alcoholic, simply omit the sparkling wine and combine the cucumber simple syrup, lime juice, and lime-flavored sparkling water, and top with mint sprigs, a lime wedge, and slices of cucumber. It will feel like you’re in a spa, and your non-drinking friends will feel spoiled.

Cocktail Tip

Make the simple syrup ahead of time and keep it chilled in the fridge. It’s not just for cocktails — drizzle it into lemonade, iced tea, or even a fruit salad for an instant upgrade. Fancy!

Garnish Ideas

I like to use a vegetable peeler to slice long thin slices of cucumber, then skewer with a toothpick. It looks great and a fancy way to make your cocktail look bar worthy!

Mint adds a great refreshing flavor to the cocktail. But lime wedges work well too.

Ingredients 

Cucumber Simple Syrup

  • 1 cup water
  • 1 cup cane sugar
  • 1 cup English cucumber, diced, (About ½ a full English cucumber. We like an English cucumber because there are fewer seeds and for the texture.)

Cocktail

  • 1 ounce cucumber simple syrup
  • ¾ ounce lime juice, (The juice of half of a lime)
  • 4 ounces sparkling wine, (We prefer Cava or Prosecco)
  • 2 leaves fresh mint
  • 1 slice cucumber, for garnish

Instructions 

Cucumber Simple Syrup

  • Simmer: Bring the sugar and water to a boil in a medium saucepan, then simmer for 1-2 minutes, or until the sugar has dissolved. Add the diced cucumber and let it simmer for 10 minutes, or until it has softened and become fork-tender. Remove from heat, cover, and steep 10 more minutes.
  • Strain: Use a fine mesh strainer to remove the solids, and transfer into a jar. Use a fork or spoon to press out all the juice from the cucumber. Store in the fridge in an airtight container for 2-3 weeks

Cucumber Mint Spritz Cocktail

  • Combine: Add a few cubes of ice to a wine glass. Add the simple syrup, lime juice, and top with sparkling wine. Garnish with cucumber slices and mint. Stir and serve. For a stronger version, add 1 ounce of gin or vodka.

Notes

Scaling Up: We love making this cucumber cocktail for crowds. Double the simple syrup and you can serve a larger crowd.
Ingredient Note: We strongly recommend you use English cucumbers for this recipe. The texture is better and the lack of seeds prevents any bitter flavor in the simple syrup.
