I’m not the first person to get in line when the Pumpkin Spice Lattes first come out in the fall season. I’m more of a summer person. But when my Ninja SLUSHi machine came calling, I had to try the popular coffee drink as a slushie. And it’s so good. Seriously. So. Good!

This Pumpkin Spice Latte Slushie has all the flavors of the coffeehouse favorite (but better, because slushie!) and is best topped with some delicious whipped cream and a pinch of pumpkin pie seasoning for good measure. The texture is rich, and you can easily customize it to your preferences or adjust it with ingredients you have at home.

Pumpkin Spice Slushie Ingredients + Substitutions

This slushie comes together with four simple and easy-to-find ingredients. The full recipe portions are in the recipe below.

  • Cold Brew Concentrate – We recommend cold brew concentrate if you don’t have an espresso machine. With more intense flavor than coffee, this is what we want to stand out in the drink. If you have an espresso machine, then feel free to use that. And if you can’t find concentrated cold brew in your grocery store, you can use standard cold brew or leftover coffee from your morning brew.
  • Pumpkin Spice Creamer – Typically only available in the fall, this creamer can be found near the seasonal section or near the creamers. We use a non-dairy version, but you’re welcome to use whatever you prefer.
  • Milk – You can use regular milk (we recommend whole milk for the texture if going with milk) or milk alternatives like almond milk. We’ve tested it with both and it comes out great.
  • Vanilla Syrup – We add vanilla-infused simple syrup (like Torani syrup) to keep the correct sugar ratio. If you don’t have the flavored syrup, you can use a homemade simple syrup or liquid sugar alternative

Non-Dairy Note – We have made this with almond milk creamer and other non-dairy milk alternatives, and the ratios are the same.

How to Make Pumpkin Spice Slushie

  1. Prep: Combine the cold brew concentrate (or coffee, or espresso), pumpkin spice creamer, milk, and syrup in a large pitcher and stir together.
  2. Slush: Pour the mixture into the slushie machine and close the latch. Press the power button, then select the “FRAPPÉ” button, or whatever your manufacturer suggests for coffee-based slushie drinks, to start the process. The machine will run and set itself to the proper temperature.
  3. Wait: Allow the slushie machine to run for 15-20 minutes, and the mixture will get to the optimal texture for a slushie.
  4. Serve: Dispense the Pumpkin Spice Latte Slushie into your favorite glass, and top with whipped cream and a pinch of pumpkin pie spice. The toppings are, of course, optional, but they do make it extra indulgent and gorgeous!

Expert Tip

Coffee-based slushies are pretty easy and forgiving. You just need to add some cream (or alternatives) to get it to properly slush. In this case, we are using the pumpkin spice creamer and milk, similar to how they would make this latte in a coffee shop. If it gets too thick, just lower the temperature of the slushie machine (found on the left side of the machine) to a lower setting.

Taste the slushie mixture before adding it to the machine and adjust the sweetness to your preference.

Ingredients

  • 1 1/2 cups pumpkin spice creamer, (we used an almond milk base, but you can use any dairy or non-dairy alternative)
  • 1 cup cold brew concentrate, (see notes if you can't find concentrated cold brew)
  • 1 cup whole milk or milk alternative
  • 2 teaspoons vanilla syrup, like Torani syrup, (or you can use simple syrup)

Optional Pumpkin Spice Slushie Toppings

  • whipped cream
  • pumpkin pie spice seasoning, (just a pinch)

Instructions

  • Prep: Combine the pumpkin spice creamer, cold brew concentrate (or espresso), milk, and syrup in a large pitcher and stir together.
  • Slush: Pour the mixture into the slushie machine and close the latch. Press the power button, then select the “FRAPPÉ” button, or whatever your manufacturer suggests for coffee-based slushie drinks, to start the process. The machine will run and set itself to the proper temperature.
  • Wait: Allow the slushie machine to run for 15-20 minutes, and the mixture will get to the optimal texture for a slushie. Pour the slushie into a cup and then top with whipped cream and a pinch of pumpkin pie spice seasoning.

Notes

Portions: This should serve 2-3 portions, depending on the size container you use.
Ingredients Notes:
  • Milk Options: We have tested and used the same portions of almond milk and almond milk creamer with the same results. If using milk, we prefer the higher fat content from whole milk but you can substitute with lower fat milks if you want.
  • Coffee: We use cold brew concentrate located in the refrigerated area with coffee in your grocery store. If you can’t find cold brew concentrate, the next best option is a couple shots of espresso and water (to equal 1 cup). If all you have is coffee, it won’t be as strong, but it will work in a pinch. It’s just important to use the same ratio of coffee to milk so it will slush.
Topping Off: If you want to keep topping off the pumpkin spice slushie, then premix the same ratio in a large pitcher and pour back into the slushie machine when it is half empty. Allow 10 additional minutes for it to slush.
Cleaning Your Slushie Machine: When done, empty the remaining slushie from the machine. Add warm water to the fill line. Press the rinse button and let it run for 10 seconds. Drain the water and discard it. Repeat with more warm water if it’s still dirty. You shouldn’t need more than 2 rinses. Dry the pieces and wipe down the cooling cylinder.
